Buckwheat Collagen Porridge

Topped with blueberries, banana, and Lakanto Monkfruit Maple Syrup

Ingredients:

  • 1/8 Cup Buckwheat Hot Cereal

  • 1/4 Cup Almond Milk or nut milk of choice

  • 1 Scoop Collagen Protein Powder - I use Primal Kitchen’s Vanilla Coconut

  • 1 Tbsp Almond Butter

  • Blueberries and Banana to top

  • Date Syrup, Apple Butter, or Lakanto’s Monk Fruit Maple Syrup to drizzle on top

Directions:

  1. Cook buckwheat cereal as directed on packaging

    • Stovetop Directions: 1 Serving: 1-1/4 cup water or milk; dash salt (optional); 1/8 cup cream of Buckwheat. 1. Bring water or milk and salt to boil. 2. Stir in Cream of Buckwheat. 3. Return to boil. Reduce heat to low; simmer 10 minutes stirring frequently.

    • Microwave Directions: For 1 serving stir 1/8 cup of Cream of Buckwheat and a dash of salt into 3/4 cup of water or milk in a 2 to 3 cup bowl.

    • Microwave, uncovered, on medium 1-1/2 to 3 minutes, depending on microwave wattage. Let stand 1 to 2 minutes.

  2. Stir in a scoop of collagen protein and one spoonful of almond or nut butter

  3. Top with whatever you like; fruit, apple butter, drizzle with some date syrup, or maple syrup and enjoy!
