Avocado Salad
This is one of those extremely simple, extremely delicious recipes that serves more as a canvas for you to customize as you like. I eat this or a variation of this salad as a side, topping, or salsa at least once a week. It goes with everything; tacos, salmon, roasted chicken, steak, or served on a bed of greens. It’s an easy and fool proof way to get in some veggies and fat to support a balanced meal and glowing skin. Enjoy!
The key components to this are avocado mixed with vegetables of your choice, fresh herbs, and something acidic. The possibilities are endless and you can add any legumes, fruit, seeds, etc that you have!
Ingredients:
Avocado
Tomato
Onion
Cilantro
Olive oil
Salt & Pepper
Choice of lemon or lime juice, coconut aminos, gluten free soy sauce, toasted sesame oil, etc.
Directions:
Chop all of your veggies. Pro tip: minimize the mess by chopping and adding the avocado last.
Add a small amount of olive oil, salt, pepper and lemon juice
Toss until well mixed
Add in any herbs while tossing or sprinkle on top
Taste, adjust, and serve!
