Air Fryer Roasted Chicken
Ok, you guys. This recipe changed my life and it will change yours too! It’s SO easy and perfect for a minimal effort dinner. You just need to prep the chicken, pop it in the air fryer, and flip it over at the last ten minutes. You can customize this and flavor the chicken as you like. I used za’atar and then served the chicken over roasted onion and lemons. Add any additional vegetables or greens and your meal is complete!
Ingredients:
1 4lb or 5lb chicken
Olive oil
Salt & Pepper
I used this za’atar spice from New York Shuk
1 Yellow Mayan sweet onion
2 Lemons
Directions:
Preheat air fryer on the ‘roast‘ setting at 390 for 75 minutes
Cut 1/2 to 1 whole lemon to stuff inside of chicken
Prep chicken by patting dry and removing neck and giblets if included
Drizzle olive oil, salt, pepper, and optional seasonings
Add lemon to the inside of the chicken
Put chicken into air fryer with the bottom side down and cook for 75 minutes
While chicken is cooking, cut onion into quarters, then half the quarters and cut lemon into thin slices
Roast onion and lemon in a cast iron pan or sheet pan in the oven with olive oil until tender and lightly caramelized
Once chicken is ten minutes away from being done, flip over to let the top get crispy. Cook until it has reached an internal temperature of 165
Serve over the lemon and onion and with any vegetables you like
Note: Adding the za’atar or any herbs closer to the end of the cooking time will prevent them from burning
