TACOS!

Tacos are a favorite meal for so many reasons: quick, unbelievably delicious, nutrient dense and customizable. These little babies are so versatile and are easy to customize based on your nutritional needs, especially when using Siete Tortillas. Low carb? Try Almond Flour Tortillas. Nut free? Try Cassava or Chickpea Tortillas. Vegetarian? Swap meat for beans, fish, jackfruit or your favorite meat alternative. We also like these taco sauces. Cooking doesn’t have to be a huge drama. We like to focus on whole foods and making sure our meals center around fiber, fat, protein, greens, but other than that just mix it up and see how you feel!

Ingredients

  • 2 T Taco Seasoning

  • 1 lb Ground Beef or protein of your choice

  • 2 c Spinach or other dark leafy green

  • 3/4 c Tomato, sliced or diced, seeds and liquid removed or not if you like a messy taco

  • 1/4 c Red Onion, thinly diced

  • 1  Avocado, sliced or diced

  • 4 Radishes, sliced thin

  • 1/2 Jalapeño, seeded and sliced

  • 1 bunch of cilantro

  • 2 Limes, quartered

  • 8 whole Cassava, Almond, Chickpea or Cashew Tortillas (Siete)

  • Lots of hot sauce if that’s your thing

    Directions

  • Begin by sauteeing the ground beef over medium heat in a skillet. Cook until no longer pink, fry a little longer in the rendered fat, then season with the Taco Seasoning and a tablespoon of water if the seasoning is a powder, or just the sauce if it’s pre-made. Season with S&P as needed. Add greens and wilt.

  • While the meat is cooking, prep the toppings. I like to make a little relish with the raw onion, radish, tomatoes, jalapeños, cilantro and lime. Toss a little salt at it and stir.

  • Warm up the tortilla pile in the microwave until pliable (15-30 sec) turning every 5 seconds.

  • Assemble your taco! Tortillas, protein, relish, hot sauce, herbs and a squeeze of lime.
